Roasted cauliflower with yogurt dressing
1 head cauliflower
4 Tablespoons good quality olive oil
1 teaspoon kosher salt
11/2 teaspoons cumin powder
1 teaspoon smoked paprika
1 teaspoon chilli powder
1 teaspoon garlic powder
Preheat oven to 500F or 260C.
Take the core of the cauliflower and the leaves out with a knife, but keep the stem connecting the whole body intact.
Slice the cauliflower into 11/2 inch slices, you should have about 5-6 slices.
Place the slices on an aluminum foil lined baking sheet and with a pastry brush, brush the slices with olive oil.
Sprinkle half the amount of the salt and the spices all over the slices.
Turn the cauliflower slices over to the other side and repeat step 4 & 5.
Place the cauliflower sheet in the oven for 20 minutes, turning the slices half way through roasting time.
Remove from oven when done and drizzle with yogurt dressing, toasted almonds and chopped cilantro.
1 Cup low fat plain yogurt
3 Tablespoons garlic sauce
1 teaspoon fresh lemon juice
1 teaspoon seasalt.
Mix all the ingredients together and serve with cauliflower.
