Avocado Smoothie


  • 3 Hass avocados ripe
  • 1/2 cup vanilla ice cream or (vanilla yogurt for a lighter version)
  • 1 banana
  • 1/2 cup whole milk
  • 2 tablespoons honey
  • 1/2 cup crushed ice
  • 1/2 cup good quality ricotta cheese (calabro or sorrento)
  • chopped pistachios for garnish


  1. In a blender, place all ingredients except for the last two. Blend till you have a smooth consistency, if too thick you can add a little more milk.

  2. Place in serving glasses and top with a dollop of ricotta and pistachios, enjoy!
